Drink Ideas to Beat the Summer Heat

With a summer heat wave sweeping the nation and no pool to cannonball into, this week was the perfect time to concoct a different, yet equally refreshing way to beat the summer heat.
Inspired by the fresh strawberries and spearmint in my garden, I came up with this awesomely refreshing summer drink. Although it's similar to a berry mojito, the ginger beer gives it a nice kick and a welcome change.
BONUS: the coconut water is hydrating and will help prevent a hangover!
1 pint glass2 strawberries (1 sliced, 1 unsliced for garnish)1 handful of mixed berries (I used blackberries, raspberries and blueberries)1 handful of diced watermelon3-4 spearmint leaves1 1/2 cups ginger beer1/4 cup coconut water1 splash lemonade*1 small watermelon slice*1 kiwi slice*1 sprig spearmint*1 shot rum, bourbon or tequila* jalapeno*Optional
Combine sliced strawberry, mixed berries, watermelon, and spearmint leaves in a pint glass. Add a splash of ginger beer and muddle well. Pour coconut water, lemonade and remaining ginger beer into glass. Shake well to mix. Add watermelon slice, kiwi, strawberry and spearmint for garnish.
If you're feeling extra sassy, add a shot of rum, bourbon, or tequila, and maybe some muddled jalapeño. I made mine with tequila and it was the perfect weekend drink! BONUS: the coconut water is hydrating and will help prevent a hangover! So go ahead, have more than one :)
